on the menu today



breakfast...yogurt parfait, with greek yogurt, bananas, blueberries, strawberries and granola we made...with sunflower seeds, whole oats, honey and raisins

lunch....bean and cheese burritos....fresh beans a boilin' away as we speak and whole wheat tortillas, cubed mangos, sweet red bell peppers

snack.......orange and cranberry muffins with clove and milk......freshly baked yesterday

all fresh, all delicious

Man it's hard to keep up with a blog when you are blogging about the thing you are doing all day. 

Today's lunch is a winner everytime. 
Lasagna.....made my eay.......fresh five veg red sauce with ground turkey, whole wheat noodles, ricotta and mozzarella cheese.....yes the cheese is high fat, but you do not have to use alot and if you ration in context to the protien of the turkey.....it is just fine

back at it, and on a beautiful sunny and warm monday, positive feelings all around.

b-fast----good old trusty cheerios and orange smiles

lunch-----sun-butter and blueberry sandwiches with carrot sticks, apple slices, cheese stick and milk
 --i love using sun-butter as an alternitive to any type of nut butter, as we cannot use nuts in either of our centers, and the smashed blueberries with a touch of sugar, preferably honey, is a perfect match, and very simple.

snack.....fresh fruit seasoned yogurt and graham crackers.....am still working on finding the time to make a fresh graham cracker.....i have a fairly simple and healthy recipe

OK.......Garden update.............my starts on spicnach, brocolli, and swiss chard all came through the dirt!
i am headin outside now to move more dirt in the goal of filling up our boxes.

lunch-----baked lemony cod, pan seared sweet, whole wheat biscuits, fruit salad and milk
........fruit salad is a great way to utilize fruit that needs to be used before the weekend.
-------and dont let people tell you that kids won't eat fish

THEY LOVE IT!
It's been over a year, but I'm back!  I am at Pierce College now and am being given the opportunity to do some wonderful things with kids, families and teachers involving food at the Milgard and Garnero Child Development Centers.

It's the end of spring, and I am looking forward to more sunny days and more importantly a new wave of seasonal fruits and veggies.  And even bigger than that.......gardening! 

We have dirt, seeds, boxes, starts and a process (sort of).  Today I will start shoveling dirt....if the rain decides to stay away.
oh ya food....
breakfast----turkey sausage sandwiches on fresh whole wheat biscuit, fresh applesauce and milk. 
                      -dont usually do meat at breakfast, but these have been in my freezer for a long                      time and need to be out of it.

TALK, TALK, TALK

          I can not stress enough how important it is to talk about food at any given moment you have with children.  Whether they are your own, your students, your family or friends, this is something that will be an interest to them and will create alot of questions inside of yourself in answering inquiries that your children may have.  And...DONT BE AFRAID OF ANSWERING THEIR QUESTIONS WITH THE TRUTH!

lunch-- one of my favs----fresh peanut butter and smashed blueberry sandwiches(on whole wheat sandwhich thins), carrot sticks with yogurt ranch, sliced organic gala apples, milk
snack-- sugar free, sodium free gelatin with fresh strawberries and grapes, whole wheat crackers

April 19---let the sun inside!~!!

breakfast----whole grain english muffins with scrambled eggs topped with melted sharp cheddar cheese, canteloupe melons and milk.
lunch----chicken pasta(check this one out.....1st...cook off two whole chickens(boil or bake),2nd take finely chopped celery, red and orange bell peppers, onions, garlic and saute..cook couscous(boil..obviously...3rd....take all prepared ingridients and mix....4th.......watch the children get healthy), orange smiles,  steamed brocolli, and milk.
snack----graham crackers(still working on that healthy, fresh recipe) spread with cream cheese and fresh strawberries....water
