          I can not stress enough how important it is to talk about food at any given moment you have with children.  Whether they are your own, your students, your family or friends, this is something that will be an interest to them and will create alot of questions inside of yourself in answering inquiries that your children may have.  And...DONT BE AFRAID OF ANSWERING THEIR QUESTIONS WITH THE TRUTH!

breakfast----whole grain english muffins with scrambled eggs topped with melted sharp cheddar cheese, canteloupe melons and milk.
lunch----chicken pasta(check this one out.....1st...cook off two whole chickens(boil or bake),2nd take finely chopped celery, red and orange bell peppers, onions, garlic and saute..cook couscous(boil..obviously...3rd....take all prepared ingridients and mix....4th.......watch the children get healthy), orange smiles,  steamed brocolli, and milk.
snack----graham crackers(still working on that healthy, fresh recipe) spread with cream cheese and fresh strawberries....water

here's another

There is a big problem for our kids, schools, and economy. Too many of our kids are starting kindergarten unprepared. According to the Department of Early Learning (DEL), the WaKIDS 2010-2011 pilot involving 2,600 students from across the state shows "nearly one-third of children enter kindergarten below expected skill levels" in all four domains of learning (e.g. physical, social and emotional, cognitive, and language). WaKIDS pilot results showed 31-74% of our kids are starting kindergarten behind in the individual domains (see source here). When kids start behind they may need costly remediation, special education, and/or grade repetition once in the K-12 education system. A recent report from Governor Gregoire (see here) revealed that: (1) nearly 3,900 students repeated kindergarten or first grade in the 2006-2007 school year costing our State $10 million; and (2) early learning improvements alone can save our State $27 million per year in grade repetition costs.

I have a thing or two to say about.....well, alot of things.  First it is very important that we all, whether you are in the edcucation field or not, to pay attention to what is going on with education and our government.
How do you contact your elected officials?
  • Call 1-800-562-6000. Leave a message for your representatives, senator, and the Governor through the toll-free legislative hotline and ask that they fund ECEAP at $110 million for 2011-2013.
  • Email (firstname.lastname@leg.wa.gov). In a clear, brief message urge them to support ECEAP maintenance funding and be sure to include your address so they know you are a constituent.
  • Find your elected officials here.
What is happening with the 2011-2013 biennial budget?
Planning and negotiations are underway right now. Last week the revenue forecast revealed the state is short $80 million for the current year and $5.1 billion short for the 2011-2013 budget. Thus, more cuts are imminent. The House is expected to release its 2011-2013 budget proposal early next week. The Senate will also release a proposal, either as the form of a separate bill or by amending the House proposal. Negotiations between the Governor, Senate, and House will be intense. Both the House and Senate will need to agree upon and approve one budget bill which will be sent to the Governor for action. She may choose to exercise her line item veto authority to strike specific portions of the budget bill.
Why must we keep speaking up for our youngest learners?
Nothing is safe from cuts. There is a fierce battle of priorities playing out in Olympia right now. The more people who speak up regularly for early learning and our children, the stronger the likelihood cuts to programs like ECEAP will be prevented. It is the third consecutive year of unprecedented budget shortfalls. Fiscal considerations have been taking the forefront from a number of months. Each revenue forecast reveals more of a shortfall and the Governor and legislators are constantly struggling with where to make the cuts.

 So, how to make food green... without..... food coloring.  Such a task is easily done.
Breakfast--cream of wheat, green pears, and kiwi diced and sprinkled over the warm cereal, and milk
Lunch---green sloppy Joe's (ground turkey, whipped avocado mixed with a light amount of cream cheese....kids loved it and it was delicious), green apples, green mashed potatoes(blended parsley with a small amount of olive oil as to allow smooth incorporation into the potatoes), and milk
snack---left over muffins from breakfast on Tuesday and milk.......green because we recycled a menu item.......booyaa!!!

lunch--fish sandwiches (today we used baked swai and talapia with yogurt, minced celery and cucumbers on whole wheat bread), organic gala apples, fresh vegetable soup, and milk---it was all a hit.\
Which is great because it is becoming evident to me that our kids are becoming "fish eaters", the last three fish meals were very well recieved.  A testiment to consistency and familiarity being key to helping children understand nutrition and healthy eating.

snack---- 100 % apple juice, graham crackers with cream cheese, (I am working really hard to find the time to create a recipe for fresh grahams, i don't like using packaged anything, i want to be able to regulate the amount of sugar and use fresh whole grain products for baking)

Lunch-- baked swai (its a distant cousin to shark and costco was having a great deal, baked with a bit of lemon, fresh herbs and salt.......kids loved it, i mean looooooooved it, i had to bake more at the last minute, I was very proud of one of my pickiest eaters....she was talking to her classmates about how good it is to try new things and that she did and it was delicious........the other child tried it and liked it......it is wonderful the possibilites when we make them what they can be),   sweet corn, honey dew melons, brown rice and milk

Sorry for the lack of attention to this wonderful thing called blogging.  It was the last week of my last quarter in my ECE program.  I am DONE!  Yeah!

Soooo what to do next?  Continue the next stages of the revolution.  What ever that may be.  I will be continuing my work here at Bates Tech in the Early Childhood Learning Center, it is such a nurturing environment for these children and everybody believes in the power of nutrtion and food here and understands that we are making a move to share the idea that is so very important to share.

       I need to comment on the constant true learning that occurs whenever i am in  the midst of these children that i so called "educate".  My reason for this topic is sparked by the departure of one very special, cursed and blessed child today from being a student in our early learning center.  This child has a condition called GSD (glucose storage defficiency).  Basically his body will not store sugar, therefore how and when his body processes its sugar(glucose) has to be regulated constantly. 
      He was diagnosed before he was as year, and prior to one and half years ago, was at home with mom or dad constantly... about two years.  Mom came to the decision that maybe it could be time for him to be able to join a social classroom environment so she could start her education, with great reluctance.  This thing, if not regulated properly, could kill him, no exagerations.   So needless to say, a huge level of trust was put on the staff here to make him and his needs a priority.  Naturally i took a huge interest in this,  with all of my attacks on the food industry and wanting to cut back the forest of this sugar addiction we have in America...here is a child that could die from not haveing enough or too much, his life revolves around knowing how much sugar is in everything.
       We took the challenge and performed with very caring, direct and precise action.   His parents brought his lunch, but as much as possible we tried (with research and energy) to incorporate his needs into our own menu and food program.  The family style meals that we believe in so strongly here needed to be incorporated into his menu, he deserves to have the same positive socal and emotional experiences as the rest.  For that reson very close attention was payed to every gram and ounce of sugar that was in every food item i put on any menu or order guide. 
       The very profound thing is, this four year old child is more aware of what sugar content most foods have that are presented in his prescence (not specifics, but enough to be aware).  Him and i and the other teachers constantly were in the middle of conversations about what foods he could eat and how much.  
      So for this I offer a very sincere THANK YOU to my young friend for allowing this learning opportunity that has effected my awareness and thought process for the rest of my life.  Goodbye and you will truelly be missed.

Lunch--chicken enchiladas (whole grain tortillas, chicken, cheese), frozen vegetable mix (peas,carrots,corn,lima beans--pan seared with a very,very,very small amount of extra virgin olive oil), fresh and juicy pineapple and milk
Snack--canteloupe melon and fig newtons

Breakfast-- fresh apple and cinnamon muffins, fresh pears and milk
Lunch--  chicken and avocado sandwiches(shredded chicken cooked fresh from whole chicken state(foster farms),mixed with cream cheese and mustard, on whole wheat sandwich thins with mashed avocado) , canteloupe melons and milk
snack--  yogurt, fruit and granola parfait (yogurt is plain seasoned with fresh berry juice from the super sauce we make for breakfast, fruit is fresh blueberries and granola is an all natural product with raisins)

Breakfast-- Cream of Wheat, (again, lightly,lightly seasoned with brown sugar and cinnamon), with bananas and milk
Lunch--vegetable jumping bean soup (zucchini,carrots, potatoes that came from our garden, onions, corn, celery, pinto beans), fish sandwiches (now this is a take on the traditional tuna fish sandwich...but we use half albacore and half leftover, cooked white fish that we serve, use light mayo..still looking for that magic alternative..pickles and celery on whole wheat bread, red and green grapes and milk
snack---super fun ceral mix....kix,cheerios,rice crispies, goldfish(preztels plus all of this for the preschoolers), and 100% apple juice..........fun and easy

breakfast--Cheerios....at least once a week, healthy and the children love 'em, fruit salad with pineapple, pears, and melons left over from the prior week, (when trying to get the most life our of food, think about the storage container that nature provides for us...the skins, melons and pineapple have a long shelf life) and milk
lunch--beef chili, freshly cut (chopped in age appropriate size for small mouths to eat)  and trimmed lean beef with onions, pinto and kidney beans, peppers(donated form an co-workers garden, and we use fresh, unsalted chicken broth from the whole chickens we cook off), organic corn chips(for the older kids(3-5) and saltines for the little ones), apple slices, and milk
snack--finger pancakes with blueberries and WATER!!!

Tuesday Feb 1
breakfast--cream of wheat (lighlty, lightly seanoned with brown sugar), fresh strawberries and bananas, and milk
lunch--pineapple ranch chicken pizza (fresh whole wheat dough for crusts, fresh yogurt ranch, freshly cooked chicken from whole chicken state, freshly cut pineapple and cheddar cheese....and the kids aske for seconds), pineapple and melon fruit salad, cucumber coins and milk
snack--graham crackers with cream cheese spread on them with grapes (cut appropriately to age) sprinkled on top...very fun for all ages

Wednesday Feb 2
breakfast--Whole Wheat fresh french toast sticks (yes fresh, 6 ingridients as oppossed to the 39 ingredient battered, fried and bagged sugar wafers that to many of our children are used to), super blueberry sauce (oh ya its super...blueberries, superfood..cinnamon,superfood...mix em... super sauce that the kids love, wonderful alternative to syrup), pears (cut appopriately), and milk
lunch--fresh chicken (white and dark meat), with healthy gravy (i know, i know..healthy gravy? yes i use whole wheat flour to coat the chicken that i heat after slow cooking it water to create a broth, and then create the gravy with that broth...a little salt...done), mashed potatoes (golds so that the peel can be left on for to ensure we are utilizing all the vitamins in the vegetable), pineapple ( in know it might seem that we use alot high vitamin c fruits, but this time of year it is going to good use inside the bodies of our children to help boost immune systems), and milk
snack--bustin' banana muffins( enough bananas to count as a fruit), and milk
Thursday Feb 3
breakfast--cheese quesadillas(whole wheat tortillas and real cheddar cheese--great meat alternative for protien source), orange smiles, and milk
lunch--bug noodles and chicken( Safeway sells these bug shaped pastas that are tomato,spinach and whole wheat pasta in their Eating Right line of foods, the kids love them, its a great source of whole grain..ya it means a trip to the store every once in awhile, but well worth it, and we put what ever veggies are available for flavor and an extra boost), steamed brocolli, apple wedges and milk
snack--whle wheat sandwhich thins with fresh peanut butter and 100% apple juice(i know the juice argument, but its all natural and its the same as real fruit it just processes faster, and great for snacks...thats about all we serve it for)

   I  tought a 90 min session today on child care nutrition basics to my classmates, it was recieved very well.  I want all to understand that its just those with the abilities or ideas that make change.  We must all be involved, alllllllll.  Especially in this mixed up fiasco that the generations before us have allowed to become our reality concerning the food we eat.  I will not allow for my children and grandchildren to become part of this, and if i can help it not another child anywhere that I have contact with.

snack time

  • finger pancakes made with left over pancake batter from last week (did you all know that you can keep most things in the refrigerator for alot longer than you think with out it going bad or turning sour.)
  • and orange slices and water
and back on the topic of water..........please, please, please,please make sure your kids arfe getting water on a constant basis throughout the day, i actually heard a teacher say one time that its about changing diapers or having to take to many trips to the bathroom.  Come on, did you ever think that the more the bladder is stimulated the more opportunity for potty-training and contenence control.  And fruther more in the defense of water and its necessity in the well being of all of us, is it not a small price to take s few extra trips to the bathroom or waste a few extra minutes and diapers and gloves for the over all weel being of the clarity of thought and of our children, which will allow them to take our guidance and remember more effectively, not to mention that it will allow for their busy muscles that are constantly growing and moving and building the proper hydration as to decrease the amount of soreness when experiencing "growing pains" or muscle grwoth and development.

fresh 6 veggie red sauce with ground turkey(i mean really, the children dont know any different from this not being store bought or the equivalant from home and they are eating vitamins and nutrients from 6 different vegetables............Come on! does it get better than that)

This lunch was about a 95% hit in every class room, very well recieved, they loved it and all have happy brains and bodies.

       bbq turkey cowboy muffins--ground turkey browned with onions stirrred with bbq sauce...(onestly this was a bad day for me to start this blog, this is the only recipe, honestly, that we use a product that comes from a jar or can)  spooned into a buscuit cup and topped with cheese--protien and carbs..iron and vit C
       celery and carrot spears with fresh yogurt ranch dip--- cooked and chopped for the 1's and 2's..vit C,A,D...good fiber
       fresh pinapple--- chopped for the 1's and 2's..fiber, vit A,C,E
       milk---calcium, vit A,D
Ad guess what, aside form the few picky pickers....all loved it and teachers were involved in discussing the meal.....that is a proud site.

for afternoon snack we will have left over apple/cheddar muffins from yesterdays b-fast and a fruit salad with random fruit from the week to ensure its good use before the weekend is here.

Breakfast--  Cream of Wheat
                   sliced fresh kiwi and strawberry fruit salad
                   milk---1% for 3-5 year olds....whole milke for 1's and 2's
           Very simple and to the point, protien and fiber and good feelings in the warm cereal, vitamin A, tons of vitamin C in the fruit, calcium, vit A,D in your milk
               And they loved it!  As we speak there are happy energized children dwelling the classrooms in this center.

What's the dilema? Or should i say who?

There is a concern that is, as of late become, of actual concern across the land.  Food and how we view it as parents and teachers(as a society really) in context to how we will guide our children to view the value of it.  I will not get into a rant on this but my first post, but i will say that we all have the right and capability to be concerned, voice those concerns and make something happen. 
Brief intro...
i am a father of two school aged children, 11 and 13..boy and girl....$eth and Skyllyn(dollar sign is his signature..not sure why..cause we're broke).  I am a college student in my last quarter to completing my EarlyChildhoodEducation associates degree. I have always felt that i had a knack for guiding children, so I decided, about two years ago to hang up the chef coat of about 12 years and get a degree in teaching, always being an intelligent, socially conscious and pethetic bleeding heart, this is somewhere i feel i should have been a long time ago.  Along my journey here of classroom teachings and computer research, I have been blessed with the opportunity to be indirectly mentored by some amazing people, while working in the learning center with the children, who have all the new approaches to teaching and guiding our young children in their hearts and minds at all times.  Through these experiences i have been givin the opportunity to find my place... and that would be food (its like the old cliche' about the mafia..i keep trying to get out..but they keep pulling me back in).  Through my workstudy hours i slowly had been moving closer and closer into the kitchen, before i knew it, there i was and am with all the best intentions to make a difference and sset it in stone for our children to have and become part of someday.  Its not just the food. Its talking, planting, harvesting, singing, painting, peeling, crushing, squishing, tasting, reading, smelling, touching, chewing, crunching, asking,discussing, its all of everything that is entaiiled in the education process...and it is based around the food we offer our children. HOPE is what i think when this topic is on my tongue..or fingers.so here is part of my goal with this blogging thing.


I am basically gonna post what our menu consisted of on a daily basis here at the Bates Early Childhood Learning Center and point out why i feel these items are necessary down to how we prepared them and how they were served.  I want as much feed back and resource as possible.  Starting tomorrow.
