Joe, I have been working on afternoon snacks that contain a protein. Here are my ideas for this week: 1)Carrot sticks and Cucumber circles with Roasted Red Pepper Hummus. (Could you post the hummus recipe again?) 2)I came across a recipe for cottage cheese pancakes, I put blueberries in them and serve them with more berries. The pancake is a protein not a grain. 1 cup pancake mix, 2 cups cottage cheese and 2 eggs would serve about 25 preschoolers (2T each) 3)Stop-light peppers cut in wedges with shredded mozzarella cheese placed under the broiler until the cheese browns a little 4)Apple slices drizzled with honey, topped with granola and baked til soft and served with a dollop of plain yogurt 5)Whole grain macaroni shapes and cheese.
Have you revisited the "Making It Balance and Kickin’ It Up A Cycle Menu for Montana Childcare"? Did you have any favorite recipes from those menus? http://healthymeals.nal.usda.gov/hsmrs/Making%20it%20Balance/introduction.pdf I know that this lunch is still a favorite. And Swai from Costco is very reasonable.
